Preparations:

Parmigiana (can choose Chicken, Veal, Eggplant, Meatballs, or Shrimp)--Breaded cutlets/fillets  in layers of marinara sauce and mozzarella cheese

Piccata (Chicken or Veal)--lightly floured cutlets sauteed and finished in a lemon butter sauce with capers

Marsala (Chicken or Veal)--lightly floured cutlets finished in a marsala wine reduction sauce with portabello mushrooms

Florentine (Chicken or Veal)--Sauteed cutlets with fresh spinach and garlic, finished with a lemon white-wine sauce

Saltimbocca (Chicken or Veal)--Sauteed cutlets with fresh sage, prosciutto and Mozzarella, finished with a white-wine butter reduction

Cacciatore (Chicken or Veal)--Braised cutlets slow-cooked in red wine and vegetables.

Rollatini (Chicken, Veal, Eggplant)--Very thin slices of meat rolled up in a ricotta and mozzarella mix finished in marinara and baked

Stuffed Shells--Large shells stuffed with ricotta and baked with homemade sauce and mozzarella

Manicotti--Manicotti pasta stuffed with ricotta and baked with homemade sauce and mozzarella.  *Can also include chicken or shrimp for filling

Baked Ziti--Ziti pasta mixed with sauce, ricotta, and mozzarella, then baked and finished with a layer of cheese on top

Lasagna--Layers of lasagna pasta baked with sauce, ricotta, and mozzarella

Lasagna Bolognese--Lasagna with meat sauce

Sausage and Peppers--Mild, sweet, or hot Italian sausage with sweet onions, fresh red and green bell peppers, finished in olive oil, white wine, and a hint of marinara sauce
